    Looks like the heat transfer from the air to the meat was slow enough to render the fat out of the meat without heating the temperature sufficiently high to brown the meat. Likely because of the low heat capacity of air and all the water evaporating and cooling the surface.

    This is salvageable. Take it out, grind it, grill it for a bit with some butter or olive oil. Put it on some tomato sauce, and serve with some pasta 🤌

    Cripes. I don’t know what to tell you, other than those patties look like they were too wet to start. And you crowded the basket, so once you slammed ’em in there it probably dropped the temp of the fryer a lot. It’s pretty clear that they are still straight up raw in the centre.

    Try cooking only two patties next time and don’t add too much wet stuff into your mixture. Or, if you *aren’t* adding anything, you may need some binders like breadcrumbs and egg.

    Either way, these look fucking horrendous. I hope you just dumped this mess into a pan and made some loose meat burgers.

  10. So, the thing about air fryers is they only work well if you let the air convect ALL the way around the food. If you crowd the basket like this, it’s more like steaming than frying.

    You crowded the air fryer so the burgers didn’t brown properly, which created a steaming pile of meat. Basically it didn’t get hot enough in the air fryer because you added too many patties.

    You can’t crowd the pan when trying to brown meat, same rule goes for air fryers.

    Do one at a time next time so that there is enough space for proper cooking via air convection. It’s not practical, but neither is the size of that air fryer for your needs. At best, it’s good for frying a handful of fries at a time, or warming up small portions of leftovers. A pan would have been better.

    So, as others have said, this happened because the burgers didnt get cooked in a high enough temp in a short amount of time. Because of the smaller volume, air friers take a much shorter time to preheat, but it also works the other way, i.e. it also cools faster. So, because either the burgers were too cold, or because you put too much in at once, it took too long for it to come to temp fast enough. I know it’s a bit hard to imagine because it’s in burger form, so thinking about it in terms of ice might help. I.e. a small amount of ice or a large amount of cold water will take less time to boil than a lot of ice.
